Our Limited Series Thai is the result of a rare collaboration between land, forest, and community in Chiang Rai, Thailand, where coffee cultivation became a tool for restoration rather than extraction. Grown at elevations between 1,400 and 1,600 meters, this coffee is produced by Phongsathorn Khunta and the Phucheedeun Forest Conservation Organic Coffee Community Enterprise. An initiative that transformed once-barren, deforested hills into a thriving, protected ecosystem.
To restore the land, the community replanted diverse fruit trees to rebuild a shaded forest canopy before introducing coffee. Today, Arabica varieties including Catuai, Caturra, Bourbon, Typica, and Java grow in symbiosis within this living forest, nurtured by rich soils, steady moisture, and a balanced mountain climate. The result is coffee that reflects its environment in both structure and flavour.
This lot is processed using a Natural Anaerobic method, carefully managed to enhance sweetness and depth while maintaining clarity. Selectively harvested cherries are fermented in an oxygen-limited environment, allowing flavour complexity to develop without overwhelming the coffee’s inherent balance.
In the cup, our Limited Series Thai is indulgent and expressive. Maraschino cherry and cherry cola lead the profile, supported by a rounded sweetness and a plush, whipped-cream mouthfeel. The acidity is lively yet integrated, and the finish is long, smooth, and gently nostalgic. An inviting reminder of the forest-grown ecosystem from which it comes.
