Some coffees feel like an exercise in precision, others like a celebration. GOLD somehow manages to be both. We've had a few of Wilton Benitez's products on our menu since 2018; we aren't fans of co-fermentation (read: co-infusion), but we are definitely fans of high-altitude Bourbons. Whether Pink, Yellow, or Red, Bourbon is a variety we particularly love. We feel that washed processes truly reveal the nature of these varietals, and Wilton's thermal shock washed processes captured our hearts a few years ago. Internally, we call it the boosted washed.

This time, the richness of this Red Bourbon from the high altitudes of Granja Paraiso 92 was what we wanted to drink on Christmas Day. GOLD is a coffee that blends science with a touch of magic. We took this base to build our signature limited series roast profile. A washed Red Bourbon that is sweet, vibrant, balanced, and just a little indulgent. The result? Notes of orange Smarties shell, blood orange, and violet flowers that feel like a slice of dessert with your morning coffee.
